Bruschetta
INGREDIENTS : 1 loaf of Italian bread 8 or 9 vine ripened tomatoes 1 jar of Basil Pesto Sauce 2 cloves of garlic Extra Virgin Olive Oil Balsamic Vinegar Fresh Basil 12 oz. goat cheese
Preheat oven to 375 degrees F (lower to 350 F if your oven runs hot) Slice Italian bread diagonally, not straight, approximately 3/4" thick.
Place Italian bread on a baking sheet. Bake in the preheated oven approximately 10 to 13 minutes, until toasted. Remove from heat. Rub a peeled whole clove of garlic over the top of each piece of toast.
Chop 8 or 9 vine ripened medium sized tomatoes in a small dice and add to a medium sized bowl
Add 1 - 2 TBS. Extra Virgin olive oil and Balsamic vinegar to taste, start out with a tsp and then add more as desired, along with some fresh chopped basil (a couple of TBS should be enough). Add a pinch of salt and pepper. Set aside for a couple of minutes.
Spread each slice of bread with approximately 1 tsp. Basil Pesto sauce. I like Barilla but other brands are good, too.
Spoon tomato mixture on top of each slice of bread. Finish with crumbled goat cheese.
