Goya Black Bean Soup
Ingredients:
1 T Goya Olive Oil
1 Clove garlic, crushed
1 tsp oregano
2 bay leaves
1 tsp ground cumin
Black pepper
2 Green Bell Peppers, chopped in roughly 1.5" pieces
1 onion, finely chopped
1 C chicken broth
2 15.5 oz. cans Goya black beans, un-drained
1 TBS light brown sugar
1 TBS white vinegar
Goya Adobo, to taste
Directions:
1. Heat oil in pot over medium-high heat. Add Garlic and all seasonings except adobo and cook about 30 seconds.
2. Add chopped green pepper and sauté, stirring frequently, over low to medium heat, about 5 minutes. Add the onions and cook until they are soft and translucent, not browned, approximately 5 or 6 more minutes.
3. Add chicken broth, beans, brown sugar and vinegar and bring to a boil.
4. Reduce heat to low and simmer, uncovered, about 20 to 30 minutes or until soup thickens.
5. Remove bay leaves and season with adobo before serving.
Offer mix-and-match toppings for a personalized soup experience. Here are a few classics: toasted sunflower seeds, raisins, cubed ham, crumbled bacon, guacamole, chopped bell peppers, shredded cheddar cheese and sour cream.
