Quick Gnocchi using Instant Potato Flakes www.allrecipes.com/recipe/11760/quick-gnocchi/Ingredients 1 cup dry potato flakes 1 cup boiling water 1 egg, beaten 1 teaspoon salt ⅛ teaspoon ground black pepper * 1 ½ cups all-purpose flour Directions Place potato flakes in a medium-size bowl. Pour in boiling water; stir until blended. Let cool. Stir in egg, salt, and pepper. Blend in enough flour to make a fairly stiff dough. Turn dough out on a well floured board. Knead lightly. Divide dough in half. Shape each half into a long thin roll, the thickness of a breadstick. With a knife dipped in flour, cut into bite-size pieces. Place a few gnocchi in boiling water. As the gnocchi rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked. * I'd start with a cup of flour or a bit more and add more gradually. Also, I might omit the black pepper and add rosemary, basil, or some Italian seasoning.

i actually goofed up a perfectly good gnocci recipe. I decided to try it with mashed potatoes(no skins)rather than baked or instant flakes. It's too moist from the boiled potatoes and the dough was far too sticky .Had an awful time of it. There's a reason to use baked potatoes or instant flakes. It was a kind of good idea gone bad.

Oh, the mashed potatoes were too wet for the amount of flour you added. I messed up my first try at gnocchi, too. I chose this recipe that had metric measurements. I have no clue what possessed me to do that but it was awful. I cooked real potatoes but there was not enough flour and the gnocchi just disintegrated in the boiling water.
I like the idea of the instant potato flakes. I had no idea you could do that till Ray mentioned it in the other post. Then last week I was watching a cooking competition on the Food Network and one of the competitors made gnocchi using instant potatoes. One of the judges said this was a really smart move. Next time I make gnocchi I'm going to use them.
