Last night we had some odd ingredients that i threw together in our insta pot but it turned out be pretty scrumptious. The hubbs loved it anyway.SHOCK!
He's a fool for anything Mexican.
We had ground turkey,1 can kidney beans,some left over stir fry veggies that were thawed out of the freezer, ketchup,a red bell pepper and one decent onion. I sauted the ground turkey and chopped onion with a dab of oil on bottom of the pot. When that was done threw in kidney beans undrained, added a half can of water from it,probably 2 tbsp sugar, the left over veggies,1 fresh red bell pepper chopped and some of a packet of taco seasoning that was also left over.
No salt or pepper. The taco seasoning,onion,sugar and ketchup took care of the flavoring.
Pressure cooked for 20 min.
He was floored how good it turned out. We're finishing what's left tonight for supper.
This from a guy who thinks i'm obsessed with the pot(no argument there).
Couple things to know about the instapot.
1. it's nothing like the old pressure cookers.You cannot blow yourself up with it. You do have to avoid the steam when you release it. there's more of a danger from a steam burn but that's about it. It warrants a warning. Use a spoon,utensil of some kind of a pot holder when releasing the valve.Other than that it's very safe and i don't know anyone stupid enough to put a bare hand/face over top of rising steam.Even i know better than that.
2. Nearly all pressure cook recipes call for liquid;whether that's broth,sauce or water. I found out the hard way that if you don't have enough liquid you will get a food burning message. The nice feature on the pot is that it does a digital read out of the message before you end up with total crispy critters. Just as it detects the burn. Remedy: pulled the plug,added water and reset the pot.Better yet,be cautious in the first place. From here out i've looked up a recipe BEFORE i start but generally you must have some liquid.
